Lemon Blueberry Bars - Happy Spring! 🌱

Spring has sprung and we could not be more excited for this gorgeous season! We have the perfect recipe for all your celebrations. Decadent Lemon Blueberry Bars, made in collaboration with the gorgeous Danielle from Cacao for Coconuts! We hope you enjoy every bite.Ā 

Lemon Blueberry Bars Ā 
Ingredients:
— 1 bag Lemon Blueberry Granola
— 1/4 cup liquid coconut oil
— 6 medjool dates, pitted
— 2 cups frozen wild blueberries
— 1/4 cup maple syrup
— Juice from half a lemon
— 1/3 cup chia seeds
— 1 tbsp lemon zest
Get Baking:Ā 
1. In a food processor, blend granola down to a flour.
2. Add in coconut oil and dates. Blend until mixture is broken down and starts to form together.
3. Line a baking dish with parchment paper.
4. Press mixture down evenly.
5. In a pot over medium heat add in frozen blueberries. Stir frequently until berries start to pop/break down.
6. Add in maple syrup and lemon.
7. Once all blueberries are broken down, reduce heat to a simmer and stir in chia seeds.
8. Pour blueberry layer over the crust and spread evenly.
9. Top with lemon zest.
10. Freeze for ~2 hours.
11. Slice and enjoy!
12. Store in fridge or freezer for a refreshing treat!
13. Freeze for 5-10 minutes to harden. Makes 12 bars!Ā
